What Ingredients do I Need for Baigan Bharta / Smoky Indian Mashed Eggplant?

  • 1 piece Brinjal - All Varieties - default
  • 1 piece Onion, Big - default
  • 2 piece Tomato, Ripe, Hybrid - default
  • 1 piece Chillies, Green - All Varieties - default
  • 3 piece Garlic, Big Cloves - default

Instructions: How to Make Baigan Bharta / Smoky Indian Mashed Eggplant

  • Roast baigan directly on flame until skin blackens and flesh softens.
  • Cool, peel skin, and mash pulp.
  • Heat oil and cumin seeds. Add onion saute till golden.
  • Add ginger-garlic ,tomatoes and spices . Cook till oil separates.
  • Add mashed baingan, salt cook 5-7 minutes.
  • Garnish with coriander. Serve hot with roti or rice.

Variations and Substitutes

For a smoky restaurant-style flavor, roast the eggplant directly on flame and cover it with a bowl for 2 minutes after roasting to trap the smoke.

Add green peas for extra texture and sweetness.

For a vegan version, ensure oil used is plant-based (avoid ghee).

You can substitute mustard oil with olive oil for a milder taste.
