Instructions: How to Make Chicken Stew

  • Heat 1 tablespoon of olive oil in a large Dutch oven over medium heat.
  • Add chicken pieces and sear on all sides until golden brown (about 5 minutes). Remove and set aside.
  • In the same pot, add the remaining olive oil, then sauté onion, garlic, carrots, and celery for 5 minutes until softened.
  • Stir in tomato paste and cook for 1 minute to deepen the flavor.
  • Add crushed tomatoes, chicken broth, thyme, bay leaf, salt, and pepper. Stir well.
  • Return chicken to the pot, add potatoes, and bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for 45–50 minutes until chicken is tender and potatoes are soft.
  • Remove bay leaf, taste, and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
