What Ingredients do I Need for Methi Kadhi?

  • 0.5 cup Gram flour ( fresh ) - default
  • 1 cup Curd ( fresh ) - default
  • 1 cup Fenugreek Leaves ( fresh ) - default
  • 1 tbsp Fenugreek Seeds ( fresh ) - default
  • 1 tbsp Mustard Oil ( fresh ) - default
  • 1 tbsp Onion, Small ( fresh ) - default
  • 1 tsp Ginger paste ( fresh ) - default
  • 1 tsp Turmeric Powder ( fresh ) - default
  • 1 tsp Red chili powder ( fresh ) - default

Instructions: How to Make Methi Kadhi

  • Prepare Base Mixture:
    Whisk 1 cup sour yogurt and 2 tbsp gram flour (besan) until smooth. Mix in 3 cups water, salt, turmeric, and other dry spices (chili, coriander powder) to form a thin, lump-free batter.
  • Sauté Fenugreek
    Heat ghee/oil. Temper with cumin seeds, fenugreek seeds, and hing (asafoetida). Add ginger-garlic paste, green chilies, and 1 cup chopped methi leaves. Sauté until the leaves wilt.
  • Cook the Kadhi
    Pour the yogurt-besan mixture into the pan. Stir continuously until it comes to a boil to prevent curdling. Reduce heat and simmer for 10-15 minutes until thickened.
  • Final Tempering (Tadka)
    In a separate small pan, heat a little ghee. Add dry red chilies and cumin seeds. Pour this sizzling mixture over the simmering kadhi and garnish with fresh coriander before serving.
