Potato Soup Recipe

This Indian-style Potato Soup (Aloo ka Shorba) is a rustic, comforting broth that transforms the humble potato into a silky, warming meal. Unlike Western versions that rely on heavy cream, this Indian preparation uses the natural starch of the potatoes and a touch of yogurt or coconut milk to achieve creaminess. Infused with "tadka" spices like cumin and turmeric, it acts as a soothing digestive aid while providing a steady source of energy. It is an excellent, budget-friendly option for those seeking a hearty, vegetable-based soul food.

  • 1 tsp Ghee ( fresh ) - default
  • 1 handful Onion, Small ( fresh ) - default
  • 0.5 handful Tomato, Ripe, Local ( fresh ) - default
  • 1 tsp Ginger, Fresh ( fresh ) - default
  • 1 tsp Garlic, Big Cloves ( fresh ) - default
  • 1 tsp Turmeric Powder ( fresh ) - default
  • 1 tsp Red chili powder ( fresh ) - default
  • 1 tsp Cumin Seeds ( fresh ) - default

Instructions: How to Make Potato Soup

  • Sauté and Pressure Cook
Heat ghee in a pressure cooker. Add cumin seeds; once they sizzle, sauté onions and ginger-garlic paste. Add potatoes, tomatoes, and dry spices. Pour in water, seal, and cook for 3-4 whistles until potatoes are very soft.
  • Mash for Texture
Once the steam releases, use a potato masher or a whisk to coarsely mash half of the potatoes directly in the pot. This thickens the broth naturally without adding flour or cream.
  • Simmer and Finish
Adjust the consistency with more warm water if needed. Let it simmer for 2 minutes to bring the flavors together. Stir in lemon juice, garnish with coriander, and serve hot.
