Instructions: How to Make Vanilla Coconut Pudding

  • In a medium saucepan, whisk together coconut milk, cornstarch, maple syrup, sea salt, and turmeric (if using).
  • Place the saucepan over medium heat and bring the mixture to a simmer, whisking constantly to avoid lumps.
  • Once the mixture starts to thicken (about 10 minutes), reduce the heat to low and continue whisking for another 2-3 minutes.
  • Remove from heat and stir in vanilla extract
