  • 1 cup Potato, Brown Skin, Small ( fresh ) - default
  • 1 tsp Garam masala ( fresh ) - default
  • 1 tbsp Mustard Oil ( fresh ) - default
  • 1 tsp Turmeric Powder ( fresh ) - default
  • 1 tsp Coriander powder ( fresh ) - default

Instructions: How to Make Bharva Tamatar Sabzi

  • Prep the Tomatoes and Filling
    Wash medium, firm tomatoes, slice off the top, and gently scoop out the pulp (reserve it). Prepare the healthy filling by mixing spiced mashed boiled potatoes with sautéed ginger, green chili, and spices (amchoor, cumin, coriander, salt). Ensure the filling is dry.
  • Stuff and Arrange
    Carefully stuff the tomato shells firmly with the potato/vegetable filling. Arrange the stuffed tomatoes in a wide, shallow pan or a baking dish.
  • Blend the onion puree with a little water and a pinch of salt to create a thin, natural gravy. Pour this gravy around the stuffed tomatoes in the pan.
  • Simmer/Bake and Serve
    Cover the pan and gently simmer the tomatoes on low heat for 15-20 minutes, or bake until the tomatoes are tender and the filling is cooked through. Garnish with fresh coriander and serve hot.
