What Ingredients do I Need for Egg Fried Rice?

  • 1 cup Jasmine rice - default
  • 2 piece Egg, Poultry, Whole, Raw - default
  • 2 tbsp Green onions ( fresh ) - default
  • 2 tbsp Carrot, Orange - default
  • 2 tbsp Capsicum, Green ( fresh ) - default
  • 1 tsp Soy sauce - default
  • 0.25 tsp Pepper, Black - default
  • 1 tbsp Sunflower Oil - default
  • 0.25 tsp Salt, Table, Iodized - default

Instructions: How to Make Egg Fried Rice

  • Heat a large wok or non-stick skillet over medium-high heat. Add 1 tablespoon vegetable oil.
  • Crack the eggs and whisk the yolk and eggwhite together. Pour in the 2 beaten eggs and scramble quickly until just set, about 1 minute. Transfer eggs to a plate and set aside.
  • In the same wok, add the remaining 1 tablespoon vegetable oil. Sauté 4 cloves minced garlic and the white parts of 3 chopped green onions (scallions) for 30 seconds until fragrant
  • Add the vegetables and stir-fry for 2 minutes.
  • Increase heat to high, add 2 cups cold cooked jasmine rice, and stir-fry for 3–4 minutes, breaking up any clumps with a spatula.
  • Return the scrambled eggs to the wok. Drizzle 1 teaspoon sesame oil over the rice. Season with 0.25 teaspoon salt and 0.25 teaspoon freshly ground black pepper. Stir well to combine
  • Sprinkle in the green tops of the scallions. Stir-fry for another 1 minute and remove from heat
  • Serve hot, garnished with extra scallion greens if desired.
