Peanut Chikki Recipe

Peanut chikki is a beloved traditional Indian brittle made by folding roasted, crunchy peanuts into a molten base of dark, caramelized jaggery. This sweet snack is celebrated for its addictive texture, offering a perfect snap that gives way to a nutty, buttery core as the jaggery melts away. Often flavored with a hint of cardamom or a touch of ginger, the mixture is spread thin and cut into neat squares or diamonds while still warm. High in protein and iron, it serves as a wholesome, energy-boosting treat that is especially popular during the winter months and festive celebrations.

What Ingredients do I Need for Peanut Chikki?

  • 0.75 cup Jaggery, Cane - default
  • 0.5 cup Peanuts, Raw - default
  • 0.5 tsp Ghee - default
  • 1 tbsp water - default

Instructions: How to Make Peanut Chikki

  • Dry roast the peanuts in a pan over medium heat until golden and aromatic (about 4–5 minutes). Remove skins by rubbing between hands. Set aside.
  • In a heavy-bottomed pan, add jaggery and water. Heat on medium until jaggery melts completely.
  • Continue cooking, stirring continuously, until the jaggery reaches the 'hard ball' stage (drop a little in water—it should form a hard ball and break when tapped).
  • Immediately turn off the heat and mix in the roasted peanuts. Stir quickly to coat all peanuts evenly.
  • Pour the mixture onto a greased plate, marble slab, or parchment paper.
  • Flatten with a greased rolling pin or the back of a spoon to about 1/4-inch thickness.
  • While still warm, mark square or rectangle cuts using a knife. Let cool completely before breaking into pieces. Store in an airtight container at room temperature.

Equipments Needed

Heavy-bottomed pan

Spatula

Greased plate or parchment paper

Knife

Rolling pin (greased)

Bowl of cold water (for testing jaggery consistency)

Variations and Substitutes

Use sesame seeds (til) along with or instead of peanuts for variety.

Add a pinch of cardamom powder or dry ginger powder to the jaggery for extra aroma.

Replace jaggery with coconut sugar or maple syrup for a twist (note: texture may vary).

Peanut Chikki Serving Suggestions

Enjoy as a healthy snack with masala chai or post-meal as a light dessert. Wrap in wax paper for gifting or lunchboxes.

Storage Tips

Store in an airtight container at room temperature for up to 2 weeks in a dry place. Do not refrigerate as it can harden or become sticky.
