Vegetable Handvo Recipe

This traditional Gujarati savory cake is a nutritional powerhouse, combining fermented rice and lentil batter with a variety of colorful, fiber-rich vegetables. It is typically seasoned with ginger, green chilies, and a tempering of mustard seeds and sesame seeds for a distinct, aromatic crunch. This preparation method involves baking or pan-cooking with minimal oil, making it a much heartier and healthier alternative to deep-fried snacks. It serves as an excellent "Zone 1" balanced meal that provides sustained energy through complex carbohydrates and plant-based proteins.
