
Luchi/Puri Recipe
Luchi is a classic deep-fried flatbread from East India, primarily made using refined flour (maida), a touch of oil, and water to form a smooth, pliable dough. Small discs are rolled out thinly and dropped into smoking hot oil, where they instantly puff up into delicate, pale-golden balloons with a soft, melt-in-the-mouth texture. Unlike its whole-wheat cousin, the Puri, a perfect Luchi remains white rather than browning and is prized for its light, airy consistency. It is traditionally served as a breakfast or festive staple, pairing exquisitely with soulful dishes like Alu Dum or sweet Cholar Dal.
